Mediterranean Tofu Tray Bake

A simple crowd-pleaser. This one-tray bake is crammed full of roasted and seasoned veg and chunky pieces of Pressed Tofu with Italian Herbs and Tomato. Easy, quick and packed with flavour!

Ingredients

1 pack of Cauldron Tofu with Italian Herbs and Tomato
1 pepper
1 sweet potato
1 courgette
1 aubergine
1 red onion
100g tomatoes
1 tbsp dried basil
1 tbsp oregano
1 tsp garlic granules or 1 fresh clove crushed
Olive oil
Salt & pepper

Method

  1. Firstly, chop your veg into equal size pieces – this helps it cook evenly, and place into a baking dish
  2. Now, slice the Cauldron Tofu with Italian Herbs and Tomato into squares and top the veg
  3. Drizzle over olive oil, add a pinch of salt & pepper, herbs, garlic and mix it all together
  4. Bake at 200C for 45 minutes
