Cumberland Sausage & Mixed Bean Casserole

Ingredients:

  • 8 Cauldron Cumberland Sausages

  • 1 red onion, sliced into wedges 

  • 2 cloves garlic, sliced

  • 50g tomato puree

  • 1x 400g tin mixed beans, drained and rinsed 

  • 1x 400g tin chopped tomatoes

  • 150ml vegetable stock 

  • 200g vine tomatoes

  • 200g mixed variety tomatoes, halved

  • 100g cavolo nero, sliced 

  • A drizzle of olive oil

Our tip

Switch out the sausages for Cauldron Lincolnshire Sausages if you have these to hand and for a seasonal twist try spinach instead of the cavolo nero.

Method:

  1. Heat a drizzle of olive oil in a large non-stock frying pan. Add the Cauldron Cumberland Sausages and red onion. Fry for 10 minutes turning regularly. 

  2. Add the garlic and tomato puree, cook for 1 minute.

  3. Add the mixed beans, chopped tomatoes and stock. Stir well.

  4. Add the vine tomatoes, mixed tomatoes and cavolo nero. Bring to a simmer, cover and simmer for 5 minutes.

  5. Spoon into warmed serving bowls and enjoy!
