Cumberland Sausage & Mixed Bean Casserole
Chill over a hot stove. This vegetarian Cumberland Sausage & Mixed Bean Casserole is unbelievably easy to make (and eat). This yummy one pot meal for all the family is full of plant and veg based deliciousness. 20 minutes and it’s ready to dive into!

Ingredients:
8 Cauldron Cumberland Sausages
1 red onion, sliced into wedges
2 cloves garlic, sliced
50g tomato puree
1x 400g tin mixed beans, drained and rinsed
1x 400g tin chopped tomatoes
150ml vegetable stock
200g vine tomatoes
200g mixed variety tomatoes, halved
100g cavolo nero, sliced
A drizzle of olive oil
Our tip
Switch out the sausages for Cauldron Lincolnshire Sausages if you have these to hand and for a seasonal twist try spinach instead of the cavolo nero.
Method:
Heat a drizzle of olive oil in a large non-stock frying pan. Add the Cauldron Cumberland Sausages and red onion. Fry for 10 minutes turning regularly.
Add the garlic and tomato puree, cook for 1 minute.
Add the mixed beans, chopped tomatoes and stock. Stir well.
Add the vine tomatoes, mixed tomatoes and cavolo nero. Bring to a simmer, cover and simmer for 5 minutes.
Spoon into warmed serving bowls and enjoy!
