Tofu Tiramisu Pots
Pack some protein in your pud. Crumbly biscuits, coffee, creamy tofu and yoghurt… these Tofu Tiramisu Pots made with Cauldron Extra Firm Tofu are literally layered with flavour. The perfect vegan dessert any night of the week.
Made with our Extra Firm Plant-Based Tofu
Ingredients:
100g Cauldron Extra Firm Tofu
3 Lotus Biscoff biscuits
2 tbsp. espresso coffee, cooled
50g coconut yoghurt
3 tsp. vanilla extract
2 tbsp. icing sugar
To serve
A dusting of cocoa powder
Chopped pistachio nuts
6 raspberries
Our tip
If making ahead of time place in the fridge and finish with cocoa powder, pistachio nuts and raspberries just before serving.
For a gluten free dessert, simply swap the biscuit base for a gluten free alternative.
Method:
Crumble the Lotus Biscoff biscuits into 2 small dessert glasses.
Pour a tablespoon of cooled coffee over the biscuit base in each glass.
Place the Cauldron Extra Firm Tofu, coconut yoghurt, vanilla extract and icing sugar into a food processor. Blitz for 2 minutes. Scrape down the sides of the blender and blitz for a further 2 minutes.
Divide the mix between 2 glasses.
To serve
Dust the tops of the tiramisu pots with cocoa powder. Decorate with chopped pistachio nuts and fresh raspberries.
