Hoisin Tofu Noodles

Ingredients:
For the noodles
1 x 160g pack Cauldron Hoisin Tofu
100g soba noodles
A drizzle of sesame oil
4 plums, stone removed and sliced into wedges
75g purple sprouting broccoli, sliced into florets
50g baby spinach leaves
For the hoisin sauce
1 tsp cornflour
1 tbsp reduced salt light soy sauce
1 tbsp. honey
1 clove garlic, crushed
A pinch chilli flakes
To serve
A pinch of sesame seeds
1 lime, sliced into wedges

For a super speedy version of this recipe just swap the homemade hoisin sauce for store bought.
Method:
For the hoisin sauce
Mix the cornflour and soy sauce in a small bowl. Add the remaining ingredients and one tablespoon of water. Mix well and set to one side.
For the noodles
Cook the soba noodles as per pack instructions. Drain and set to one side.
Heat a drizzle of sesame oil in a large non-stick frying pan over a medium-high heat. Add the Cauldron Hoisin Tofu pieces, plum wedges, broccoli and spinach. Sauté for 5 minute.
Add the prepared hoisin sauce and cooked noodles. Toss to coat all of the ingredients in the sauce and warm through.
To serve
Divide between 2 warmed serving bowls. Garnish with sesame seeds and lime wedges.
