Sweet & Sour Tofu Stir-Fry
A lip-smacking vegan dinner that’s ready in just ten mins? Sweeeeeet. And sour. With chunks of pineapple, fresh veg and Cauldron Tofu Pieces, this Sweet & Sour Tofu Stir-Fry has tasty takeout vibes without a delivery driver tip.


Made with our ‘Naked’ Tofu Pieces
Ingredients:
160g Cauldron Tofu Pieces
30g ketchup
15ml rice vinegar
15ml soy sauce
150g pineapple chunks
150g mixed bell peppers, sliced
75g snap peas
15ml vegetable oil
15ml cornflour slurry (cornflour mixed with water)
250g cooked rice, to serve
Method:
1. Toss the Cauldron Tofu Pieces in cornflour. Fry on a medium high heat in a non-stick pan with a little oil for 2-3 minutes, until golden and crisp.
2. In the same pan, stir-fry the peppers, snap peas and pineapple for 2–3 minutes until slightly tender but still vibrant.
3. Next, make the sauce by mixing ketchup, vinegar, soy sauce, and a splash of the pineapple juice in a bowl then add to the pan. Simmer briefly, then stir in the cornflour slurry to thicken.
4. To serve, spoon over hot cooked rice and enjoy!
