Ingredients

1 pack Cauldron Middle Eastern Falafels

For the Salad:
½ large white onion, finely sliced
2 inch piece of cucumber, seeded and finely sliced
2 large tomatoes, de-seeded and finely diced
3 tbsp coriander Leaves & stems, chopped
2 tbsp fresh mint, chopped
Juice of half a lemon
Salt, pepper & sugar to taste.

For the Mint Yoghurt:
300g natural yoghurt
1 tbsp malt vinegar
4 fresh mint leaves
1 tbsp smooth mango chutney
3 tbsp fresh mint, finely chopped
Salt, pepper & sugar to taste.

Chapattis to serve – optional

Method

  1. To make the salad combine the onions, cucumber, tomatoes, coriander, mint, lemon juice, salt, pepper and sugar.
  2. To make the mint yoghurt mix together the yoghurt, vinegar, mint, mango chutney and seasoning.
  3. Cook the Cauldron Falafels according to on pack instructions and serve with the salad and mint yoghurt and chapattis.
