Ingredients
1 pack Cauldron Middle Eastern Falafels
For the Salad:
½ large white onion, finely sliced
2 inch piece of cucumber, seeded and finely sliced
2 large tomatoes, de-seeded and finely diced
3 tbsp coriander Leaves & stems, chopped
2 tbsp fresh mint, chopped
Juice of half a lemon
Salt, pepper & sugar to taste.
For the Mint Yoghurt:
300g natural yoghurt
1 tbsp malt vinegar
4 fresh mint leaves
1 tbsp smooth mango chutney
3 tbsp fresh mint, finely chopped
Salt, pepper & sugar to taste.
