Ingredients:

For the hot honey

5 tsp honey

1/4 tsp chilli flakes

For the Cauldron Falafel wrap

6 Cauldron Middle Eastern Falafel

2 Mission Carb Balance Wraps

2 tbsp Holy Moly Smashed Avocado

1 bag Florette Classic Crispy Salad

2 baby cucumbers, sliced

1 small carrot, spiralized

For the warm apricot salad

2 apricots, halved and stone removed

2 baby cucumbers, sliced

Method:

For the hot honey

1. Place the honey and chilli flakes into a small saucepan. Add 2 tablespoons of water and mix. Bring to the boil and boil for 2 minutes. Remove and set to one side.

For the Cauldron falafel wrap

2. Place each wrap on a serving plate. Add half of the Holy Moly Smashed Avocado to the base.

3. Divide the cucumber and carrot between each wrap and add a handful of Florette Classic Crispy Salad. Half the falafels and add to the wraps, along with a drizzle of hot honey (save the rest of the hot honey for the salad)

4. Fold in the top and bottom edges of the wrap one inch and then tightly roll. Cut in half.

For the warm apricot salad

5. Heat a non-stick griddle pan over a medium-high heat. Add the apricots, cut side down.

6. Griddle for 4-5 minutes or until the apricots have char marks. Set to one side.

7. Place the remaining Florette Classic Crispy Salad into a large serving bowl. Add the griddled apricots, baby cucumber and drizzle with the remaining hot honey dressing. Enjoy!
