Tofu ‘Halloumi’ Sharing Platter

Tofu halloumi - or should that be totally hallou-yummy? Perfect for dining out(doors), this vegan sharing centrepiece is surprisingly simple to make but super hard to resist. 

Made with our Cauldron Extra Firm Tofu, this is a seriously lip-smackingly good halloumi hack!

Ingredients:

For the lemon tofu ‘halloumi’:

1 x 220g pack Cauldron Extra Firm Tofu

1 unwaxed lemon, juice only

1 tbsp. maple syrup

2 tsp. dried oregano

1 tsp. olive oil

For the pesto hummus dip:

3 tbsp. reduced fat hummus

1 tbsp. vegan pesto

To garnish:

Mint leaves 

For the platter:

1 x 200g pack Cauldron Moroccan Falafel 

1 head red chicory leaves 

1 green pepper, sliced 

50g sugar snap peas, sliced

12 cherries

½ small watermelon, sliced 

75g fine asparagus, blanched 

½ pomegranate 

8 vegan crackers

Our tip

If you have time, leave the Cauldron Extra Firm Tofu to marinate overnight for extra flavour.

Method:

For the lemon tofu ‘halloumi’:

1. Slice the Cauldron Extra Firm Tofu into 8 slices.

2. Place the lemon juice, oregano and olive oil into a bowl. Mix well. Add the sliced tofu and spoon over to coat. Leave to marinate for 10 minutes. Reserve the marinade.

3. Heat a non-stick griddle pan over a high heat. Cook the tofu slices on the griddle for 1-2 minutes on each side to achieve griddle char marks. 

4. Place the reserved marinade in a small pan. Bring to the boil. Boil to reduce to a sticky consistency (this will take about 3 minutes). 

For the pesto hummus dip:

5. Mix the hummus and pesto in a small bowl.
Divide between 2 small serving dip bowls.

For the platter:

6. Place the griddled lemon ‘halloumi’ tofu in the centre of a large serving platter, drizzle with the reduced sticky marinade. Arrange the Cauldron Moroccan Falafel around the tofu.

7. Place the pesto hummus dip bowls on the platter.

8. Arrange the remaining platter ingredients artistically on the serving platter.   

To garnish:

9. Garnish with mint leaves and enjoy!
