Falafel Fattoush Salad with Toasted Pitta & Sumac Dressing

A light and refreshing salad, that takes its influence from the Middle East. It makes a great lunch or a tasty side to your main meal.

Ingredients

1 pack of Cauldron Moroccan Spiced Falafel Bites
1 large romaine lettuce, shredded
16 cherry tomatoes, halved
½ cucumber, chopped
4 radishes, thinly sliced
½ red onion, thinly sliced
10 g fresh coriander, finely chopped
10 g fresh mint, finely chopped
1 pitta bread, toasted and cooled
1 tbsp toasted sesame seeds

For the dressing:
2 tbsp extra virgin olive oil
1 tbsp lemon juice
½ tbsp sumac
½ tsp salt
½ tsp black pepper

Method

  1. In a large bowl, toss together the lettuce, tomatoes, cucumber, radishes, red onion, coriander and mint. Transfer to a large salad bowl and assemble the Cauldron Moroccan Spiced Falafel Bites on top. Roughly chop the toasted, cooled pitta and scatter across the top of the salad, along with the sesame seeds.
  2. To make the dressing, mix all ingredients together. Drizzle over the salad or serve separately with each portion.
