Refreshing apple, crunchy kale and a power punch of chilli are a recipe for success with the Cauldron Vegan Wholefood Burger at centre stage.
1 pack of Cauldron Burgers
100g celeriac, sliced very thinly then cut into ribbons
100g green apple, peeled and sliced very thinly
100g kale, shredded and blanched for 3-4 minutes in boiling water
Squeeze of lemon juice
Ingredients for the Dressing
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp lime juice
Zest of ½ lemon
1 tsp sugar
1 tbsp chopped herbs such as coriander or parsley
1 red chilli, chopped
1. Preheat the oven to 200C/400F/Gas Mark 6.
2. Combine the celeriac, apple and kale in a bowl. Add the lemon juice and stir well ensuring the ingredients are coated.
3. Combine the ingredients for the dressing.
4. When the burgers are cooked, allow to cool for 1-2 minutes then cut each into quarters. Arrange each on a serving plate with a generous scattering of celeriac salad and drizzle over the dressing.
