Vegan Greek Pizza

1 pack Cauldron Marinated Tofu Pieces
2 tbsp olive oil
2 portions of prepared pizza dough
1/2 small red onion, thinly sliced
120 g kalamata olives, pitted
150 g cherry tomatoes
200 g canned chickpeas, drained, rinsed and mashed
2 tsp nutritional yeast
2 tbsp finely chopped fresh parsley


  1. Preheat the oven to 220°C/200°C fan/Gas 7.
  2. Brush 1 tbsp oil on to two 30 cm pizza pans or cast iron pans. On a lightly floured work surface, roll each piece of dough into 30 cm round, about 1 mm thick. Place in the prepared baking sheets.
  3. Brush the remaining oil evenly over the pizza bases. Top with the red onions, olives, cherry tomatoes and chickpeas. Top with Cauldron Marinated Tofu Pieces and sprinkle with nutritional yeast.
  4. Bake the pizzas for 10-12 minutes or until the crusts are golden brown. Before serving, garnish with parsley.
