Tofish Burger

Serves 2

A vegan take on the classic, childhood favourite ‘fish finger sarnie’.
Indulge in a golden layer of crispy fried Cauldron Quick & Tasty Tofu between two soft buns and slathered in homemade tartar sauce and vegan cheese.

1 pack Cauldron Quick & Tasty Tofu
1 nori seaweed sheet
50 g panko breadcrumbs
50 ml rapeseed oil for frying

For the batter:
125g flour
1 tsp sea salt, fine
½ tsp turmeric
2 tbsp pickle brine
Juice half a lemon
A couple of tablespoons of beer (go for a vegan friendly pale ale!)

For the Vegan Tartar Sauce:
100g vegan mayonnaise
2 Tbsp fresh dill, finely chopped
1 finely diced pickle
1 Tbsp pickle brine
Juice of half a lemon
1 tsp maple syrup
Half of shallot or small onion (finely diced)
½ tsp black pepper
Sea salt to taste

For serving:
2 vegan-friendly burger buns
A few pieces of lettuce
2 slices of vegan cheese
2 tbsp carrot slaw
Sweet potato wedges on the side


  1. Start by whisking together all ingredients for the batter in a medium-size mixing bowl until smooth.
  2. Drain the tofu, then slice it in half along the longer edge. Cut a nori seaweed sheet into pieces equal to the tofu and place 1 slice on the top and bottom of each tofu piece.
  3. Place the panko breadcrumbs onto a shallow plate and heat the rapeseed oil in a deep non-stick skillet.
  4. Dip each nori-coated piece of tofu into the batter, allowing for the excess to drip off, then coat it in the panko breadcrumbs. Gently place the tofu into the hot oil and fry until golden on both sides.
  5. In the meantime, prepare your vegan tartar sauce: Simply stir together all ingredients in a small bowl and season to taste with salt.
  6. To assemble your burgers, lightly toast your burger buns, spread a spoonful of the tartar sauce onto the bottom bun, top with lettuce and the hot tofu patty. Add a slice of vegan cheese on top and a spoonful of carrot slaw, then drizzle with more tartar sauce and add the top bun.
  7. Repeat for the second burger and you’re ready to dig in! Delicious served alongside sweet potato fries.
