Vegan Tofu Quesadillas

Ingredients

1 pack Cauldron Marinated Tofu Pieces
1 avocado, halved, pitted, peeled and smashed
3 tsp chipotle paste
4 flour tortillas (20 cm)
200 g tinned black beans, drained and rinsed
70g vegan cheese, shredded
1 tbsp olive oil
1 large tomato, diced
1/4 red onion, finely diced
1 small jalapeno, seeded and diced
2 tbsp finely chopped coriander
1 tbsp lime juice
1 tbsp extra virgin olive oil
1/2 tsp salt

Method

  1. Mash the avocado with the chipotle paste and spread on 2 tortillas. Scatter over the Cauldron Marinated Tofu Pieces and black beans, then scatter the vegan cheese on top. Top with the remaining tortillas.
  2. Spray the outside of the tortillas with cooking spray.
  3. Preheat a panini press/toastie machine according to manufacturer’s instructions. Cook in the press for 2 to 3 minutes or until the tortillas are golden and the cheese melts.
  4. Meanwhile, toss together the tomato, red onion, jalapeno, coriander, lime juice and salt. Let it stand for 5 minutes for the flavours to marry.
  5. Cut the quesadillas in wedges and serve with the tomato and coriander salsa.

Chef's tip

Alternatively, cook the quesadillas in a large frying pan set over medium heat. Cook or 2 to 3 minutes per side or until lightly toasted and cheese is melted.
