Vegan Griddled Peach, Courgette and Teriyaki Tofu Salad

This bright, flavourful salad is a breeze to prepare and is a centrepiece that is sure to impress. Grilled orange tamari peaches add a smokiness and depth while our Teriyaki Tofu adds a tasteful tanginess.


2 packs of Cauldron Teriyaki Tofu Pieces
2 peaches, halved, de-stoned and sliced
1 courgette, sliced into long strips
2 tbsp tamari
1 tbsp orange juice
1 tsp brown sugar
30 g rocket
15 g edamame beans
1 pack of pre-cooked Quinoa

For the dressing:
1 tbsp tamari
2 tbsp orange juice
1 tbsp orange zest
1 tbsp sesame oil
¼ tsp pepper

To serve:
8 mint leaves


  1. Mix together the tamari and orange juice with the brown sugar and drizzle over the peaches.
  2. Place a griddle pan on to a high heat and grill the peaches and courgettes with the Cauldron Teriyaki Tofu pieces for 3-4 minutes, until slightly charred. Once cooked, set aside.
  3. Mix together the rocket, edamame beans and quinoa. Add the peaches, courgettes and tofu to combine and transfer to a serving plate.
  4. To make the dressing, mix all ingredients together until combined.
    Garnish with mint leaves and pour the dressing to serve.
