Tofu Mince Stuffed Lettuce Cups

A fresh, crunchy alternative to a taco! Cooling lettuce filled with spiced Tofu Mince and topped with chillies and spring onions – a refreshing starter or side!

Ingredients

1 Pack Cauldron Tofu Mince
Vegetable oil for frying
2 red chillies, finely chopped
1 red onion diced
2 tbsp vegan soy sauce
1 tsp brown sugar or palm sugar
1 lime, juiced
2 large tomatoes, deseeded and cubed
2 spring onions, cut on an angle
3 little gem lettuces, leaves removed and washed.

Method

  1. Heat a splash of vegetable oil in a frying pan and fry the onion and ½ the chilli gently for 3-4 minutes.
  2. Add the Cauldron Tofu Mince and coat in the onion and the chilli, season with soy sauce and sugar, bring to a boil.
  3. Season with salt and pepper to taste
  4. Finish the mince with a squeeze of lime and extra chilli if required.
  5. Serve in lettuce cups with the diced tomato and spring onion.
