Spicy Cajun Vegan Tofu Wraps

Inspired by the eateries of New Orleans, this 20-minute meal is packed full of flavour and totally vegan! Cauldron Marinated Tofu Pieces are coated with Cajun seasoning, pan-fried until golden and folded inside wholemeal tortillas with creamy avocado, crunchy sweetcorn, fresh tomatoes and baby spinach. Ideal for breakfast, lunch or dinner, try them toasted for an extra crunch!

Ingredients

2 packs Cauldron Marinated Tofu Pieces
2 tbsp vegetable oil
1 tsp Cajun seasoning
60 g vegan mayonnaise
2 tbsp sriracha hot sauce
1 tbsp lemon juice
1/4 tsp each salt, pepper and smoked paprika
4 large wholemeal tortillas (25 cm)
60 g baby spinach
2 avocadoes, halved, pitted, peeled and sliced
16 cherry tomatoes, halved
100 g tinned sweet corn, drained

Method

  1. Heat the oil in a skillet set over a medium-high heat. Cook the Cauldron Marinated Tofu Pieces with Cajun seasoning for 5-8 minutes or until crispy around the edges.
  2. Meanwhile, stir together the vegan mayonnaise, sriracha, lemon juice, salt, pepper and smoked paprika.
  3. Spread the mayonnaise down the centre of each tortilla, leaving a 2.5cm border. Top with the spinach, tofu, avocado, tomatoes, and corn. Fold up the bottom and sides of the tortillas to enclose the filling.

Chef's tip

For gluten free wraps, use corn tortillas.
