Smoked Tofu Paella

1 pack Cauldron Organic Tofu, pressed and cubed
2 tbsp of oil
150g mushrooms
50g broccoli chopped into small florets
100g red pepper, sliced
50g babycorn, sliced
1 medium onion, finely diced
2 garlic cloves, crushed
1 red chilli, finely chopped
275g paella or white rice
2 tsp smoked paprika
2 tbsp tomato puree
200ml white wine
900ml vegetable stock, made with 2 vegetable stock cubes
150g tomatoes, peeled and chopped
2 tbsp chopped parsley
Salt and freshly ground black pepper
1 lemon to garnish


  1. Pre-heat 1 tbsp of oil in a large saucepan and brown the tofu for a couple of minutes on both sides, put to one side to reserve.
  2. In the same pan pour in the remaining oil, add the mushrooms, broccoli, pepper and babycorn. Cook until lightly browned, remove from the pan and reserve to one side. Place onions in the pan and soften. Add the garlic, chilli, rice, smoked paprika and tomato puree. Cook for 1 minute.
  3. Add the wine, stock and tomatoes. Simmer, covered, until the rice is cooked, adding more liquid if necessary during the cooking time.
  4. Add the tofu, vegetables and parsley. Season with salt and freshly ground black pepper. Garnish with lemon wedge.
