2 tbsp of oil
150g mushrooms
50g broccoli chopped into small florets
100g red pepper, sliced
50g babycorn, sliced
1 medium onion, finely diced

275g paella or white rice
2 tsp smoked paprika
2 tbsp tomato puree
200ml white wine
900ml vegetable stock, made with 2 vegetable stock cubes
150g tomatoes, peeled and chopped
2 tbsp chopped parsley
Salt and freshly ground black pepper
1 lemon to garnish
