Scrambled Tofu Tostadas with Pico De Gallo

These Scrambled Tofu Tostadas with Pico De Gallo are inspired by the best of Mexican street food. A crunchy tortilla topped with seasoned scrambled tofu and homemade salsa!

For the pico de gallo:
1 small red onion, finely chopped
1 large tomato, finely diced
squeeze 1/2 lime juice
handful chopped coriander

For the scrambled tofu:
1 block of Cauldron Quick & Tasty Tofu (250g)
1 1/2 tsp turmeric
1/2 tsp garlic powder
large pinch of salt & pepper to taste
100ml plant-based milk

Serve with:
2 corn tortillas, toasted
1/2 sliced avocado
2 tbsp hot sauce


  1. Start by preparing the scramble by draining the block of tofu, cut it in half setting one aside. Add to a blender the 1/2 block tofu, 1tsp of turmeric, garlic powder, plant milk and salt and pepper and blitz until smooth.
  2. In a non-stick pan add roughly crumbled other half of tofu, add 1/2 tsp turmeric powder and fry for a few minutes before pouring over the smooth tofu mix and stirring slowly on low -medium heat.
  3. Prepare the pico de gallo by simply dicing the ingredients and adding them to a bowl.
  4. Toast the tortillas and prepare the tostadas by adding the sliced avocado, salsa, scrambled tofu, add a generous serving of hot sauce, fresh coriander and more cracked black pepper.
  5. Enjoy!
