Piri Piri Tofu Tray Bake

If you’re not already in love with any recipe that’s one-pan or one-tray, it’s time to get involved!
This spiced, seasoned tofu tray bake is an explosion of flavours for any day of the week. Fill your bowl and save the rest for speedy lunches or prepped dinners.

Ingredients

1 pack of Cauldron Marinated Tofu pieces
2 red bell peppers, sliced
1 red onion, sliced
1 small head of broccoli, chopped into florets
2 tbsp olive oil
Salt and pepper, to taste
Fresh coriander or parsley for garnish

For the piri piri sauce:
1-2 red chillies, chopped (depending on the desired spiciness)
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
2 tbsp olive oil
1 tbsp red wine vinegar
Juice of 1/2 lemon

Method

  1. Preheat the oven to 200°C (180°C fan)/Gas Mark 6.
  2. In a small bowl, mix together all the ingredients for the peri peri sauce.
  3. In a large oven tray or pot, add the sliced red peppers, red onion, and broccoli florets. 4. Add the Cauldron Marinated Tofu pieces to the tray/pot.
  4. Pour the peri peri sauce over the top of the vegetables and tofu, and toss everything together until everything is coated in the sauce.
  5. Drizzle with 2 tbsp of olive oil and season with salt and pepper.
  6. Roast in the oven for 25-30 minutes or until the vegetables are tender and slightly charred.
  7. Now it’s time to enjoy your Peri Peri Tofu Traybake hot out of the oven, garnished with fresh coriander or parsley if desired!
  8. You can serve your tofu traybake alongside homemade hummus & toasted pitta bread, or opt for rice or quinoa, roasted sweet potatoes, garlic bread or naan bread!

Chef's tip

For an extra kick of flavour, squeeze some fresh lemon juice over the traybake before serving and sprinkle with sesame seeds for a little crunch!
