Middle Eastern Rainbow Tofu Wraps

Quick & Tasty Tofu is marinated and then fried and thrown into tortilla wraps with a handful of fresh tangy veg – the perfect lunch to take on the go or enjoy al fresco!

1 block Cauldron Quick & Tasty Tofu (drained and pressed)
4 small tortillas/flatbreads
2 tbsp smoked paprika (hot or sweet)
2 tbsp dukkah
2 tbsp vegetable oil
1/4 red cabbage Shredded
1 tsp sugar
1/2 tsp salt
3 tbsp white wine vinegar
2 tsp harissa paste
6 tbsp oat yoghurt
Salt and pepper to taste
Few sprigs Parsley
Chilli, Sliced
Sriracha Mayo, to garnish


  1. Mix together the paprika, dukkah and oil in a large bowl.
  2. Cut the tofu into equal square pieces and marinate in the paprika mixture, mix well. Set aside. This can be done up to 24hrs in advance.
  3. Mix together the vinegar, salt and sugar until dissolved and add the cabbage, stir together. This can be done in advance, but the cabbage will lose its crunch the longer it is in the vinegar.
  4. Mix together the yoghurt and harissa paste, add a little salt and pepper if desired.
  5. Heat a frying pan over high heat and stir fry the tofu until toasted and crispy. Season to taste.
  6. Toast or warm the wraps in the oven or microwave. Spread the Harissa yoghurt on the base of the wrap and then the pickled cabbage. Add 1/4 of the tofu cubes and top with parsley, chilli and sriracha mayo as a garnish.
