Kalbi BBQ Tofu Bahn Mi with Cheat Kimchi

Stuffed with Smoky BBQ Tofu, fresh carrot, cucumber, vegan mayo and homemade Kimchi, it’s a loaded sandwich with serious flavour.

Ingredients

1 pack of Cauldron Smoky BBQ Tofu
1 tbsp vegetable oil
1 minced sweet onion
1½ tsp grated ginger
1½ tsp smoked paprika
100ml water
140ml cider vinegar
3 tbsp tomato paste
2 tbsp hoisin sauce
2 tbsp gochujang
1 can of canned pears, chopped – reserve juice
200g sauerkraut
2 tbsp of chilli garlic sauce
1 carrot, grated
Vegan mayo
4 Sub Rolls

Method

  1. Over medium-high heat, add onion and sauté for 3 minutes. Add ginger and paprika and sauté for 1 minute.
  2. Stir in water, vinegar, tomato paste, hoisin sauce and chilli-garlic sauce and bring to a simmer.
  3. Add pears with the juice and continue to cook over low heat for 30-35 minutes. Remove from heat and blend
  4. Mix sauerkraut and chilli oil to make a cheat kimchi
  5. Grill planks of Smoky BBQ Tofu and baste in the sauce until they start to caramelise
  6. Toast the sub, spread with vegan mayo, grated carrot and cheat kimchi
  7. Then, finally, add your caramelised Smoky BBQ Tofu and top with sauerkraut
