Hawaiian Tofu Poke (Po–kay) Salad

This tasty and light salad is inspired by Poke (pronounced po-kay) the Hawaiian dish which originally contained marinated raw fish similar in idea to Peruvian Ceviche. We have teamed Cauldron Marinated Organic Tofu Pieces with rice and peppers and a light yuzu and soy dressing.

Ingredients

1 Pack Cauldron Marinated Organic Tofu Pieces
200g cooked rice
1 red pepper, cut into thin strips
4 spring onions, finely sliced
1 ripe avocado, sliced
4 handfuls of rocket
30g pickled jalapenos, chopped
1 tsp toasted sesame seeds

For the Dressing:
3 tbsp yuzu
½ tbsp lemon juice
2 tbsp soy sauce
½ tsp chilli flakes

Method

  1. Combine all of the ingredients for the poke salad in a bowl. Prepare the dressing by mixing the ingredients together then drizzle over, sprinkle with sesame seeds and enjoy!
