Feel Good Broth with Marinated Tofu Pieces

This nutritious, flavoursome broth is a light but satisfying combination of Cauldron marinated tofu pieces, spices and fresh herbs. Turmeric and ginger are known for their antioxidant properties, cinnamon and fennel are great for digestion. With lots of fresh herbs, lime and amaranth, finish with a touch of chilli – known to increase your metabolism. All in all, this dish is a great source of protein, low in fat and saturated fat, low in sugar.

1 pack of Cauldron Marinated Tofu Pieces

For the Stock:

1.5L water
1 onion, roughly chopped
1 clove of garlic
1 large piece of root ginger, peeled and roughly chopped
2 carrots, peeled and roughly chopped
2 sticks celery, roughly chopped
2 sticks of lemongrass, outer leaves removed then cut in half lengthways
1 tsp fennel seeds
1/2 – 1 tsp ground turmeric
1 small red chilli, halved
1 stick of cinnamon
1-star anise
50g amaranth
1 large bunch of coriander, including stalks
1 small bunch of basil, including stalks

For the Broth:

1 carrot, peeled and finely diced
1 stick of celery, finely diced
50g amaranth
1 stick of lemongrass, very finely chopped
200ml light coconut milk


  1. Place all of the stock ingredients in a large pan, bring to the boil then simmer for around 1 hour 30 minutes. Sieve and then strain through a fine sieve or muslin.
  2. Return the sieved stock to a pan, add the carrot, celery, amaranth and lemongrass and bring to the boil then simmer until the amaranth is cooked (approximately 30 minutes).
  3. Stir in the coconut milk, coriander, mint, chilli and marinated tofu pieces and warm through then season to taste with lime juice and freshly ground black pepper.
