For the Stock:
1.5L water
1 onion, roughly chopped
1 clove of garlic
1 large piece of root ginger, peeled and roughly chopped
2 carrots, peeled and roughly chopped

2 sticks of lemongrass, outer leaves removed then cut in half lengthways
1 tsp fennel seeds
1/2 – 1 tsp ground turmeric
1 small red chilli, halved
1 stick of cinnamon
1-star anise
50g amaranth
1 large bunch of coriander, including stalks
1 small bunch of basil, including stalks
For the Broth:
1 carrot, peeled and finely diced
1 stick of celery, finely diced
50g amaranth
1 stick of lemongrass, very finely chopped
200ml light coconut milk
