BBQ Tofu Banh Mi Baguette

Delicious Vietnamese style BBQ’d Tofu Baguette. The perfect summer lunch or lighter dinner packed full of flavour. Totally Gluten-Free & Vegan!

Ingredients

1 Pack Cauldron Tofu block

Sauce:

1/4 cup tamari
1 tbsp maple syrup
1 tbsp cider vinegar (other vinegar will work)
1 juice of lime
1 garlic clove, crushed
1/2 tsp chopped chilli

Extras:

Gluten-free baguettes
1 Carrot
3 inch cucumber
Lettuce
Fresh coriander

Method

  1. Drain and press your tofu block for 10 minutes
  2. Meanwhile prepare the sauce by adding all the sauce ingredients to a large mixing bowl and mix
  3. Finely chop your carrot and cucumber into long thin slices and add to the sauce to marinate
  4. Now chop your tofu into thin slices (0.5cm thick) and add to the marinade making sure to spoon over the sauce so it’s all covered
  5. Allow to marinate for 10 minutes whilst you heat up the BBQ (if using gas)
  6. Fry the tofu on either side until charred, you can also heat your Baguette on the BBQ (optional)
  7. Now slice open your baguette and scoop out the bottom bread (creates more room) then add the lettuce, tofu, carrot, cucumber and fresh coriander
