This Portuguese inspired recipe combines the juiciness of ripe peach with the rich flavours of Cauldron Wholefood Sausages – a late summer delight ideal as a satisfying yet light lunch or supper!
4 Cauldron Vegan Wholefood Sausages
1 tbsp olive oil
2 peaches grilled or baked until softened
1 large ripe tomato, deseeded and diced
½ red onion, diced
100g white beans such as cannellini
2 large handfuls of salad leaves such as radicchio
Ingredients for the Salad Dressing
2 tbsp olive oil
1 tbsp white wine vinegar
Zest and juice of ½ lemon
1 tbsp chopped fresh basil
Salt and black pepper to taste
Preheat the oven to 200°C. Cook the Cauldron Vegan Wholefood Sausages as per pack instructions.
Bake or grill the peaches with a little oil for 5-10 minutes until softened.
Prepare the salad dressing by shaking all of the ingredients together. Mix the tomato, onion, beans, salad leaves and dressing.
When the Cauldron Vegan Wholefood Sausages are cooked, allow to cool for 5 minutes then slice and top the salad with them.
