Maakouda-Inspired Moroccan Falafel Sandwich

Inspired by Moroccan street food – this Maakouda-style sandwich is topped with Cauldron Moroccan Falafels and a tangy Harissa-spiced sauce. Traditionally, it’s created with small potato cakes, but using Cauldron Falafels is super easy and convenient to enjoy this delicious street food at home.

1 pack of Cauldron Moroccan Falafels
1 tbsp rapeseed oil for frying
2 paninis, sliced
2 large tomatoes, sliced
A handful of large gem lettuce leaves
Fresh coriander to serve

For the sauce:
2 tbsp tomato paste
1 tbsp harissa paste
½ smoked paprika
½ tsp ground cumin
¼ tsp salt
Juice of 1 lemon


  1. Heat a little oil in a non-stick skillet and add the Cauldron Moroccan Falafels. Fry them over medium heat for 4-5 minutes or until golden all around, then remove them from the skillet
    and set aside.
  2. Toast the paninis in the skillet for 1-2 minutes or until golden, then remove it from the heat.
  3. To create the sauce, mix together all ingredients in a small bowl.
  4. To assemble the sandwich, spread 1-2 tablespoons of the sauce across the bottom half of the toasted panini, then top with lettuce,
    tomato, and Moroccan Falafels. Drizzle with more sauce and sprinkle with fresh coriander.
  5. Top with the top half of the panini and serve immediately
