Ingredients

4-5 Cauldron Middle Eastern Frozen Falafels
2 tsp rapeseed oil
60g couscous, cooked
A handful of wild rocket salad
1 carrot, peeled
¼ cucumber, cubed
¼ avocado, sliced
2 tbsp edamame beans
2 tbsp pickled red cabbage
A handful of cherry tomatoes
3 tbsp hummus
1 tbsp fresh lemon juice

To garnish
Fresh coriander & seeds

Method

  1. Heat the rapeseed oil in a non-stick frying pan over medium heat, then add the Frozen Falafels and cook until golden all around.
  2. In the meantime, finely shred the peeled carrot and cut the cherry tomatoes into halves. In a small bowl, stir the lemon juice into the hummus until it’s super smooth
  3. Cook the couscous as per pack instructions
  4. Assemble your falafel bowl! Start by placing the wild rocket and cooked couscous into the bowl, then add the cucumber, carrot, shredded red cabbage, avocado slices, edamame beans and cherry tomato halves. Place the hummus into the middle of the bowl, then add your cooked and golden falafels and garnish with fresh coriander and some crunchy seeds
  5. Ready to get dipping!

Chef's tip

Drizzle a little sriracha on top if you like it spicy!
