Falafel Rounds with Olive Tapenade

This tasty Mediterranean delight blends the flavours of juice black olives perfectly with the light spices of Cauldron Falafels. Enjoy with a fresh, leafy salad.

1 pack of Cauldron Falafels

For the Tapenade:
175g pitted, black olives
2 cloves of garlic, crushed
2 tbsp lemon juice
½ tbsp. lemon zest
25g fresh parsley
15g fresh thyme
1 tbsp capers
Salt and black pepper to taste


  1. To make the tapenade, pulse the ingredients in a food processor to make a roughly chopped topping.
  2. Preheat the oven to 200°C/400°F/Gas mark 6.
  3. Place 2 falafels in a 6-7cm metal ring and squash down, top with a generous spoonful of tapenade and bake for 10-15 minutes.
  4. Serve with a fresh, green salad and zesty dressing.
