Falafel kebabs with orange & beetroot salad

This colourful salad combines the flavours and textures of the Middle East with the richly marinated Cauldron Moroccan Falafel Bites to add a spicy, sweet and very tasty dimension.

Ingredients

1 pack Cauldron Moroccan Spiced Falafel Bites

Ingredients for the Marinade
3 tbsp pomegranate or grape molasses
2 tbsp vegetable oil
1 tbsp lemon juice

Ingredients for the Skewers
1 red onion, cut into chunks
1 yellow or orange pepper, cut into 2-3cm pieces
2 tbsp olive oil
1 aubergine, cut into 2-3cm pieces
4 wooden skewers soaked in cold water for 10-15 minutes

Ingredients for the Salad
2 small beetroot, boiled and peeled, sliced very finely with mandolin or side of the grater
2 Blood oranges, peeled and thinly sliced
1 small red onion, very finely sliced
100g pomegranate seeds
½ cucumber, peeled and cut into 1cm cubes
2 handfuls of mixed salad leaves such as red endive and rocket

Ingredients for the Salad dressing
3 tbsp olive oil
1 tbsp pomegranate or grape molasses
½ tbsp lemon juice
1 clove garlic, crushed

Salt and pepper to taste

Method

1. Preheat the oven to 200°C/400°F/Gas Mark 6.

2. Prepare the marinade by combining the ingredients in a bowl, set to one side.

3. To prepare the skewers, lightly fry the onion and pepper in 2tbsp of the oil for 2-3 minutes to soften slightly and allow to cool for a few minutes. Place the falafels, aubergine, onion and peppers into the marinade and coat well. Divide into four equal amounts and thread onto the skewers.

4. Place the skewers onto a baking sheet and bake for 8-10 minutes until the vegetables are cooked.

5. Place the beetroot in a bowl and cover with half of the salad dressing, cover and refrigerate for 10 minutes.

6. Prepare the salad by arranging slices of the orange and beetroot and on a large plate. Top with the salad leaves. Scatter the cucumber, onion and pomegranate seeds over the salad and drizzle with the remaining salad dressing. Season to taste.

7. Top with the falafel skewers.
