Rainbow Tofu Sandwich
Upgrade your lunch with our plant powered Rainbow Tofu Sandwich recipe! Thinly sliced Cauldron Extra Firm Tofu is soaked in a beetroot and miso marinade for a punchy colour and flavour, before being air-fried to perfection. It’s sweet, smoky & loaded with crunchy kraut style veggies, layered between toasted sourdough bread. Delish!
Made with our Extra Firm Plant-Based Tofu
Ingredients:
2 x 220g blocks Cauldron Extra Firm Tofu
4 slices vegan cheese
8 slices sourdough bread
For the tofu marinade
40g cooked beetroot
80ml water
1 tbsp distilled white vinegar
1 tbsps white miso
2 tbsps Dijon mustard
1 tbsp black pepper
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
‘For the quick ‘kraut’’
⅓ white cabbage
1 carrot
10g parsley
150ml distilled white vinegar
150ml water
For the Russian dressing
15g diced onion
15g diced pickles
30g ketchup
15g vegan mayo
1 tbsp vegan yogurt
½ tbsp vegan creamed horseradish
½ tsp hot sauce
Method:
Using a mandolin (or a knife if you don’t have one), thinly slice the Cauldron Extra Firm Tofu and place in a baking dish.
To a blender add all the tofu marinade ingredients and blend until smooth. Pour this over the tofu, ensuring it is evenly coated.
Whilst the tofu is marinating, make the quick ‘kraut’. To a pan add the vinegar and water and heat until boiling.
Next, thinly shred the cabbage, onion and carrot and add to a jar with your parsley. Pour over the vinegar and water mix and leave to pickle.
Now the tofu is marinated, take the tofu strips out from the marinade, place in an air-fryer and cook at 180˚ for 12 mins (air fryer times may vary).
While the tofu is cooking, whip up the Russian dressing by simply mixing all the dressing ingredients together in a bowl.
Once the tofu is cooked, it’s time to assemble the sandwich. Add a layer of the Russian dressing on the bottom slice of rye bread then add 2 slices of vegan cheese. Add the tofu slices, followed by a layer of kraut and finally, the top slice of bread. Slice to serve or just devour as is…enjoy!
