Veggie Sausage Lasagne

Ingredients

6 Cauldron Vegetarian Cumberland Sausages
1 onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
500g passata
60g tomato puree
1 small handful fresh basil
1 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon olive oil

For the Cheese Sauce
50g butter
50g all-purpose flour
500ml milk
200g grated cheddar cheese
Salt and pepper to taste
For the Lasagne
5 fresh lasagne sheets
50g grated Parmesan cheese (for topping)

Method

  1. Preheat your oven to 180°C (350°F)
  2. In a large skillet, heat the olive oil over medium heat. Crumble the Cauldron Vegetarian Cumberland Sausages into the skillet and cook until they are lightly browned
  3. Add the chopped onion and minced garlic, and sauté until they become translucent. Add the diced red and yellow peppers and cook for another 2-3 minutes
  4. Stir in the passata, tomato puree, dried basil, dried oregano, salt, and pepper. Simmer for about 10 minutes, allowing the flavours to meld, and then remove from heat
  5. In a separate saucepan, melt the butter over medium heat
  6. Stir in the flour to create a roux. Cook for a minute or two, stirring constantly, until the roux becomes light golden in colour.
  7. Gradually whisk in the milk, and continue to whisk until the sauce thickens. Reduce the heat to low, and stir in the grated cheddar cheese until it’s completely melted and the sauce is smooth. Season with salt and pepper to taste, and then remove from heat
  8. In a greased baking dish, spread a small amount of the cheese sauce on the bottom. Place a layer of lasagne sheets over the sauce and add half of the Vegetarian Sausage Filling over the lasagne sheets
  9. Pour a third of the cheese sauce over the sausage filling
  10. Repeat the layers: lasagne sheets, remaining sausage filling, and another third of the cheese sauce
  11. Finish with a final layer of lasagne sheets and pour the remaining cheese sauce on top. Sprinkle the grated Parmesan cheese evenly over the top.
  12. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes
  13. Remove the foil and bake for an additional 10-15 minutes or until the lasagne is bubbling and the top is golden brown
