Vegan Sausage Wrap with Basil Pesto & Red Peppers

The perfect combination of the Mediterranean tomato and haricot beans with fresh vibrant basil pesto, all wrapped up in a soft and comforting wrap.


4 Cauldron Vegan Wholefood Sausages (with Grilled Mediterranean Vegetables)
4 small tortilla wraps
1 red onion, finely sliced into rings
1 tbsp of oil
100g ready roasted red peppers, drained, and thinly sliced
A handful of rocket leaves

For the Basil dressing:
25g fresh basil
4 tbsp oil
1 garlic clove, crushed
20g vegan parmesan cheese finely grated


  1. Pre heat the oven to 200°C/400*F/Gas mark 6.
  2. Place the basil, oil & garlic into a blender and pulse until you have broken down the basil leave and it resembles the consistency of pesto then mix in the parmesan. Refrigerate until needed.
  3. Cook the sausages to the pack instructions.
  4. Pre-heat the oil in a pan and gently fry the onion rings for 3 minutes now add the sliced pepper and cook for a further 2 minutes.
  5. Place the wrap onto a plate, spread a thin layer of the basil dressing and top with a sausage, red onion, red pepper and rocket then roll.
