Tofu Tikka Masala

250g of Cauldron Quick & Tasty Tofu
1 tbsp of ginger, finely grated
2 cloves of garlic, crushed
200g of plain, plant yoghurt
2 tsp of paprika
1 tsp of ground cumin
1 tsp of ground coriander
1 tsp of garam masala
1 tsp of turmeric
1 tsp of chilli powder
1 tbsp of lemon juice

For the sauce
2 tbsp of salted plant butter
1 onion, finely diced
50g of ground almonds
1 garlic clove, crushed
2 tsp of ground coriander
2 tsp of paprika
2 tsp of cumin seeds
1/2 cinnamon stick
1 tsp of ground fenugreek
1 tsp of chilli powder
2 cardamom pods
300ml of plain plant yoghurt
500ml of passata


  1. Mix all marinade ingredients, add cubed tofu and leave for 20 minutes to marinate.
  2. Fry onion for 15 minutes on low heat. Add almonds and then spices.
  3. Add yoghurt and passata and then leave to thicken – you can blend this if you like.
  4. Grill the marinated tofu until it starts to char.
  5. Serve with rice or naan.
