Tropical dessert or any time of year super refreshing drink – Cauldron Tofu adds a low in fat creaminess to this recipe that will delight. Why not add a splash of rum or vodka for an evening twist?
1/2 block of Cauldron Organic Original Tofu, drained
1 tbsp maple syrup (to taste)
½ pineapple, peeled and cubed
2 handfuls of crushed ice
Optional garnishes such as cacao nibs, coconut and mango flakes, grated chocolate
Blitz the tofu and maple syrup in a food processor until smooth. Add the pineapple and blitz for a further 2-3 minutes until smooth. Sweeten to taste with maple syrup.
Stir in the crushed ice and serve immediately.
