Crispy Fried Tofu Burger

When the burger cravings come calling, this recipe is sure to satisfy! The crispy vegan buttermilk coating uses a combo of cereals to add extra crunch (yes, you read that correctly!), and it’s balanced out with vegan mayo and sharp gherkins. It’s burger night done right!

Ingredients

For the burgers
1 block of Cauldron Quick & Tasty Tofu cut into 2 or 4 pieces
3 tbsp plain flour
1 tbsp smoked paprika
1 tsp garlic powder
1 tbsp dried oregano
4 tbsp cereal (either cornflakes or rice crispies, or both!)
Cooking oil

4 tbsp plant-based milk
1/2 lemon or lime squeezed

For the sauce:
4 tbsp vegan mayo
1 tsp gherkin juice (just from the jar)
1 tsp oregano
pinch garlic powder
pinch salt and pepper

Serve with:
Vegan brioche buns
handful of gherkins
leafy greens

Method

  1. Start by mixing the dried coating ingredients together, and then in a separate bowl, stir together the lime juice and plant milk
  2. Chop the tofu into 2 or 4 pieces, then add to the buttermilk and coat, then transfer into the dried cereal and flour mix then make sure each side is coated
  3. Transfer to a pan of cooking oil on medium-high heat and fry on each side for around 30-60 seconds until golden
  4. Prepare the sauce by mixing together the ingredients
  5. Load up those burgers with sauce, and leafy greens and top with chopped gherkins and enjoy!
