Easy Vegan Tofu Black Bean Stir Fry

Wok could be better than this easy vegan Tofu Black Bean Stir Fry tonight? As well as our Authentic Tofu and Black Bean sauce, there’s vibrant peppers, crunchy water chestnuts, and a hint of warming chilli. It’s the perfect quick & easy midweek meal for two!

Ingredients:

  • 1 x 396g pack Cauldron Authentic Tofu

  • A drizzle of sesame oil

  • 1 green pepper, cut into bite sized pieces 

  • 1 red pepper, cut into bite sized pieces 

  • 4 spring onions, cut into inch long pieces 

  • 1 thumb ginger, sliced into matchsticks 

  • 1 garlic clove, sliced 

  • 3 tbsp. black bean sauce

  • ¼ tsp. chilli flakes 

  • 1 tin of black beans, drained 

  • 1 small tin of water chestnuts, drained 

To serve (optional)

  • Extra spring onion, sliced

  • ½ tsp. sesame seeds

  • ½ tsp. nigella seeds

  • Wholegrain basmati rice

Our tip

This easy vegan stir fry recipe works really well served with noodles for a change. 

Method:

  1. Press the Cauldron Authentic Tofu block as per pack instructions.

  2. Slice the tofu into thin strips approximately 1 cm thick. 

  3. Heat a drizzle of sesame oil in a large non-stick frying pan. Fry the tofu strips for 3-4 minutes ensuring all sides are golden brown (you may need to do this in batches). Remove and set to one side. 

  4. Add a little more sesame oil to the pan. Add the peppers and spring onion. Stir fry over a high heat for 3 minutes.

  5. Add the ginger and garlic, stir-fry for a further 2 minutes.

  6. Mix the black bean sauce with 3 tablespoons of water in a small ramekin.

  7. Add the chilli flakes, black beans, water chestnuts, pan fried tofu and black bean sauce into the pan. Cook for a further 2 minutes to warm though.

To serve

  1. Spoon your vegan stir fry into warmed serving bowls and garnish with chopped spring onions, sesame seeds and nigella seeds. Serve with basmati rice.
