Sicilian Arancini with Roasted Mediterranean Vegetables

This tasty recipe is perfect for a midweek dinner, or as a dinner party starter. It brings together some of Italy’s most popular flavours, in a few simple steps.


2 packs of Cauldron Sicilian Arancini
1 red pepper
1 yellow pepper
1 red onion
1 courgette
8 mushrooms
2 cloves of garlic, peeled and roughly chopped
Salt and pepper
4 tbsp olive oil
2 tbsp fresh rosemary leaves, roughly chopped
2 tbsp fresh basil, roughly chopped
Rocket to serve


  1. Preheat the oven to 200°C/400°F/gas mark 6.
  2. Prepare all of the vegetables, cutting each of them into similar sized chunks, of approximately 2cm.
  3. Put the vegetables in a large roasting tin and drizzle over the olive oil, add the garlic and salt and pepper.
  4. Sprinkle over the rosemary and basil, then place the vegetables into the oven.
  5. Roast them for approximately 25-30 minutes or until they are cooked through and just turning golden brown.
  6. Meanwhile, cook the Cauldron Sicilian Arancini as per pack instructions.
  7. When cooked, remove from the oven and spoon the vegetables into the middle of a plate, placing 2 – 3 Arancini over the top, per serving.
  8. Serve with rocket and a final drizzle of olive oil.
