As unashamed foodies through and through, we’re doing the right thing and putting cauliflower in the limelight. That’s right, all hail the humble cauli!

Below, we’ve pulled together all the reasons why cauliflower is so mighty when eating, and cooking vegan food!

Nutritional Benefits of Cauliflower

Often overshadowed by its popular green-machine sibling broccoli, cauliflower is packed full of vitamins. minerals and nutritionally-rich goodness that can help with your overall health.

Cauliflower florets

To name only a few, you’ll find vitamins and minerals such as Vitamin C, K, and B6 (which help to maintain the normal function of the immune and nervous system, blood vessels and bones), as well as Potassium and Magnesium.

Cauliflower is also a great source of fibre and high in Choline – a mighty nutrient that supports metabolism and liver function. In fact, claim your fame cauli, it’s one of the best plant-based sources out there for this particular nutrient.

Why now? Why all of a sudden are we singing cauliflowers’ praises and gracing your screens with this powerful ingredient?

You’ll be happy to hear that cauliflower is currently in its prime. It’s in season from January through to April so, if all this cauli talk has you craving the tasty vegetable, now’s your time!

Of course, you’ll find cauliflower in supermarkets year-round but by eating seasonally, you’re more likely to reap the full nutritional benefits of any fruit and veg.

How To Cook Cauliflower

There are lots of ways you can cook and enjoy the tasty cauliflower – roasted, boiled, grated, mashed, raw, steamed or as a full cauli steak, the options are endless.

Some may find themselves stuck and unsure of its capabilities because of its mellow flavour but, the sooner you start seeing this as an opportunity, the better!

Roasted Cauliflower

Its delicate, faint flavour acts as an open canvas to host punchy spices, creamy sauces and rich salty seasoning. It soaks up whatever flavours you throw its way (similar to our tofu!), making it a great addition to a variety of dishes such as a cauliflower curry recipe, a wholesome vegan cauliflower cheese side-dish or, if you fancy diving in the deep end, an entire cauliflower steak (to name just a few).

We’ve come prepared to inspire you with some top-notch cauli cooking but, before we do, here are a few tips and tricks when picking out the perfect florets:

  • Look for a cauliflower that’s creamy white in colour (free from brown marks or dark smudges on the florets).
  • The florets themselves should be huddled close together and densely packed. They don’t have to be uniform in shape or size but they should look full and plump.
  • The blanket of leaves should look fresh and vibrant.
  • If you’re buying from a supermarket, rather than a fruit and veg market, cauliflower can sometimes be wrapped in plastic. If it is, when you get home, relieve it from the plastic coating and, instead, pop it in a paper bag or loose wrap before putting it into the fridge. This will allow your cauliflower to breathe and stop the encouragement of excess moisture.
