Weeknight Winners: Our Favourite Quick & Easy Meals

After a long day at work, you don’t always want to spend hours and hours in the kitchen. That’s why we’ve brought together some of our favourite quick and easy recipes – using just a handful of tasty ingredients, you’ll be sitting down to eat a delicious dinner in a matter of minutes!

Quick & Easy Vegan Thai Green Curry

Serves : 2-3
Preparation Time : 5 minutes
Cooking Time : 10-12 minutes
Recipe Type: Vegan

Ingredients

  • 1 pack Cauldron Marinated Tofu Pieces
  • 1 tbsp vegetable oil
  • 1 pack oriental stir fry vegetables (400g)
  • 2 tbsp Thai Green Curry Paste
  • 1×400ml coconut milk
  • 1 bunch fresh coriander (25g)

Method

1. Preheat the vegetable oil in a wok over a medium heat, add the Thai Green Paste and cook for 1-2 minutes stirring often.

2. Add the stir fry vegetables and tofu and continue to stir for 1-2 more minutes.

3. Stir in the coconut, bring to the boil then reduce and simmer for approximately 8-10 minutes.

4. Season with lime juice, soy sauce and top with the freshly chopped coriander

Chef’s Tip

If you like your curry with an extra kick, finely chop a red or a green chilli and add it in with the vegetables. Use the seeds if you want to make it really spicy, or remove them with your knife if you want less heat.

Quick & Easy Falafel Wrap with Beetroot Hummus

Serves : 2
Preparation Time : 5 minutes
Cooking Time: 14 minutes
Recipe Type: Vegetarian/Vegan

Ingredients

  • 1 pack Cauldron Middle Eastern Falafels
  • 1× 200g pot of beetroot hummus
  • ½ tbsp creamed horseradish (to make this recipe vegan, leave out or use a vegan alternative)
  • Rocket leaves
  • 2 wraps

Method

1. Heat the falafels following pack instructions.

2. Meanwhile, mix the creamed horseradish into the beetroot hummus.

3. Spread a generous amount of beetroot hummus over the wrap, sprinkle over the rocket and top with halved falafels, roll.

4. Serve the remaining hummus on the side as a dip.

Chef’s Tip

Perfect for a quick evening meal, these wraps are also ideal for your lunchbox the next day. Mix things up with red pepper or caramelised onion hummus.

Quick & Easy Vegan Italian Sausage Stew

Serves : 2-3
Preparation Time : 5 minutes
Cooking Time : 20 minutes
Recipe Type: Vegan

Ingredients

  • 1 pack Cauldron Vegan Mediterranean Sausages
  • 1 tbsp vegetable oil

  • 250-300g ready to microwave new potatoes

  • 1 sachet/jar of your favourite tomato pasta sauce (e.g. cherry tomato and chilli
)
  • 25g black olives, sliced

  • Basil leaves, roughly torn

Method

1. Pre-heat the oven to 200°C/ 400°F/Gas Mark 6 or Fan 180°C.

2. Brush Cauldron sausages with half of the oil and cook on the middle oven shelf for 20 minutes.

3. Half way through the sausage cooking time, cook the potatoes in the microwave, season and halve. Keep warm.

4. Warm the sauce through, smother over the sausages and potatoes, garnish with the olives and basil.

Chef’s Tip

If you’re feeling extra decadent, switch out the new potatoes for a creamy mash made with vegan butter.
