The Perfect Vegan Picnic Planner

Posted · 6th July 2020

Now that summer has arrived and everyday life is steadily returning, we’re excited about the weeks and months ahead!

With half an eye on weather apps, we’re now filling our social calendars with wholesome, outdoor activities. And there is nothing more wholesome than a picnic in the Great British outdoors.

We’ve pulled together a quick guide on how to enjoy al fresco dining this July – including four flavourful recipes, plus a packing checklist to make sure you’re fully prepared.

Please make sure to follow all government guidance on spending time outdoors.

Best Easy Picnic Foods

It may sound obvious, but the most important aspect of any picnic is the food, and this can sometimes be tricky to get right. It needs to be portable, it needs to travel well, and of course – it needs to be tasty.

The secret to this lies is in the preparation. Taking the time to prepare a mouth-watering spread the day before removes any packing pressure, and means your choices are likely to be healthier and more considered.

With that in mind, we’ve handpicked a quartet of recipes that are both quick to prepare and have your favourite Cauldron products at the heart.

Falafel Summer Rolls with Avocado Dip

Take a nod to Vietnamese street food with these light Falafel Summer rolls.

You can make these ahead for your picnic!

Tofu Summer Quiche

Packed with colour and flavour, this Summer Quiche is a picnic or any outdoor eating treat.

The Cauldron Organic Tofu is combined with basil and topped with grilled vegetables to give light layers of satisfaction.

Falafel Poke Bowl

Step into summer with this deliciously light and healthy Hawaiian inspired recipe paired with falafel.

It’s so simple and quick to make, and what’s more, it’s good for you!

Vegan Tacos With Teriyaki Tofu & Pineapple Salsa

The charred pineapple and tomatoes add texture and body to these easy weeknight vegan tacos.

Spicy jalapenos are combined with a lime-yoghurt sauce to provide the perfect balance with the Teriyaki tofu. These tacos are hearty, healthy and filled with flavour.

Packing list

Once you’ve decided on the food, it’s time to think about packing. Follow this checklist to make sure you’re not caught short on the day:

  • Wicker Picnic Basket: Look for hampers with storage slots for cutlery and plates, and make sure the handles are strong. If you’re carrying it while searching for the perfect spot, the last thing you need is an impromptu collapse!
  • Waterproof Picnic Blanket: Because nobody likes scrubbing grass stains.
  • Ice Packs: To keep chilled foods safe and fresh, make sure to include ice packs that have been in the freezer overnight. If you have room, consider a cool box for extra storage space for both food and drinks.
  • Bamboo picnicware: Forget disposable plastics and invest in reusable bamboo options – there’s an increasing number of options available in a variety of eye-catching designs.
  • Utensils: To avoid messy fingers, make sure to pack a cutting knife (with a cover), chopping board, serving spoons and cutlery. Plus a bottle opener/corkscrew if you’re anticipating a liquid lunch…
  • Antibacterial hand wash and napkins: To keep everyone’s hands clean and ensure all utensils are sanitised.
  • Sun Cream AND an umbrella: Even if the forecasts say otherwise, be prepared! Having a compact umbrella can prevent a quick shower from turning your day trip into a washout.
  • Bin Bag: Be courteous. When you’re heading home, clean up all your rubbish and recycle correctly.

With your basket now fully equipped and filled to the brim with delicious foods, you’re officially picnic-ready. Now all you need to do is invite your friends, pick a spot and enjoy the sunshine.

Here at Cauldron, we’d love to see your picnic hampers this summer. Share your al fresco snaps with us over on Instagram and we’ll repost some of our favourites!
