Vegan Burger with Mango Salsa on Avocado Rye

This open sandwich incorporates amazing flavours and nutritious ingredients, perfect any time of day.

Ingredients

1 pack Cauldron Vegan Wholefood Burgers (with Cauliflower, Aduki Bean, Spinach and Chipotle Chilli)
1 small, ripe mango, cut into small cubes
½ small, red onion, diced
1 tbsp lemon juice
3 tbsp mango chutney
1 ripe avocado
Pinch of salt and black pepper
2 slices of rye bread

Method

  1. Preheat the oven to 200°C/400°F/Gas mark 6.
  2. Cook the burgers according to pack instructions.
  3. Meanwhile, in a small bowl mix the mango, red onion and lemon juice. Stir in the mango chutney.
  4. Mash the avocado with a fork in a bowl and season lightly with salt and black pepper.
  5. When the Cauldron Burgers are almost ready, warm the avocado for 20-30 seconds and spread onto the rye bread.
  6. Warm the mango salsa for 10-20 seconds in the microwave and when the burgers are cooked, place them on the avocado rye and top with a generous spoonful of the mango salsa.
  7. Fancy something a bit different? Try a seasonal twist to this recipe and add fresh, seasoned, baby broad beans in place of the avocado.
