Smoked Tofu, Mushrooms & Spinach on Toast

A flavour-packed light meal packed with goodness with mushroom and spinach, ready in just 15 minutes. Cauldron Smoked Tofu Pieces add a hearty twist to this simply delicious dish.

1 pack Cauldron Smoked Tofu Pieces
1 tbsp olive oil
200 g chestnut mushrooms, sliced
1 garlic clove, crushed
1 tbsp soy sauce
¼ tsp salt
¼ tsp pepper
100 g baby spinach
2 large slices of sourdough, toasted
2 tbsp tahini, mixed with 2 tbsp water
1 tbsp toasted pine nuts
1 tbsp chopped parsley


  1. Heat the oil in a frying pan over a medium heat.
  2. Add the Cauldron Smoked Tofu Pieces and chestnut mushrooms and fry for 3-4 minutes, turning once.
  3. Add the garlic, soy sauce, salt and pepper and continue to fry for a further 2 minutes. Add the spinach to the same pan and cook until wilted.
  4. To serve, divide the tofu mix between the two pieces of toasted sourdough.
  5. Drizzle with the tahini and garnish with toasted pine nuts and parsley to serve.
