1 pack of Cauldron Hoisin Tofu pieces
200g sushi rice
400ml water
1 tablespoon rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
4 large tortillas
100g shredded carrots
1 medium-sized bell pepper, thinly sliced
2 mini cucumbers, quartered
4 tbsp sweetcorn
4 tbsp edamame beans
4 tbsp Hoisin sauce (store-bought or homemade)
Optional: sliced avocado, sesame seeds for garnish

  1. Prepare the sushi rice according to the package instructions. In a saucepan, combine the sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed. Once done, let it sit covered for an additional 10 minutes
  2. In a small bowl, mix together the rice vinegar, sugar, and salt. Gently fold this mixture into the cooked sushi rice and set it aside to cool slightly
  3. Warm the tortillas in the microwave or on a skillet for a few seconds to make them pliable
  4. To assemble the burritos, lay out each tortilla and add 2 tablespoons of sushi rice in a line to the bottom half of the wrap. Add your other toppings and generously drizzle with hoisin sauce, then fold in the sides of the tortilla and firmly roll up the burrito
  5. Place each burrito, seam-side down, into a hot skillet and toast the tortilla wrap to seal. To serve, simply slice each burrito in half and enjoy the hoisin burritos right away!
