Caramelised Onion Linguine with Grilled Tofu Triangles

Ingredients

1 pack Cauldron Tofu with Italian Herbs
A little olive oil to grease
3 large onions, finely sliced
1 tbsp olive oil
1⁄2 tsp sea salt
200g linguine pasta
350ml tomato sauce or passata
2 tbsp pine nuts, lightly toasted

Fresh basil to serve
Salt & pepper to taste

Method

  1. Cook the pasta according to packaging instructions.
  2. Cut the Tofu with Italian Herbs into 1cm slices, then cut each slice into 2 triangles. Lightly grease a griddle pan and fry the Tofu pieces for a few minutes on each side, flipping them carefully.
  3. Heat the olive oil in a large non-stick pan and place the onions inside. Fry for 2-3 minutes until they begin to soften, add the sea salt and continue to fry the onions on medium heat, stirring regularly for about 20 minutes until they are golden and caramelised.
  4. Stir in the pasta sauce, then add the cooked and drained pasta to the pan and mix together. Season to taste with salt and pepper.
  5. Top with fresh basil leaves and toasted pine nuts and serve the pasta topped with the grilled Tofu with Italian Herbs triangles.
