National Vegetarian Week 2018

National Vegetarian Week is upon us once again – the time of year that’s all about setting yourself the challenge of going vegetarian for just one week. Organised by the Vegetarian Society, this year it takes place between Monday 14th and Sunday 20th May – it’s an ideal opportunity to learn how to cook different dishes, adopt a vegetarian lifestyle or simply take your first steps towards eating less meat.

The idea of gently encouraging people to adopt a meat-free lifestyle by eating exciting, authentic meals is one that really resonates with us – and we have loads of delicious vegetarian recipes that show just how easy it can be to switch things up. And this doesn’t mean you have to compromise on taste. In fact, enjoying flavoursome, satisfying meals you can make at home is what we’re all about.

This year, we’ve brought together some our all-time favourite vegetarian recipes, that prove once and for all you don’t need meat or fish for a tasty meal that fills you up. We’re encouraging everyone to “make the switch” and swap out meat in place of a vegetarian alternative, such as tofu, falafel or vegetarian sausages. And by planning your meals out in advance, you can look forward to an entire week of delicious dishes without having to spend too much time looking for fresh inspiration. So take a look at some of our mouth-watering recipes below!

  • Lincolnshire Sausage & Beetroot Veggie Burger

    We’ve swapped the beef for a hearty patty made with our vegetarian Lincolnshire sausages and beetroot. Served in a brioche bun with peppery rocket, sliced tomatoes and a tangy horseradish cream, this super vibrant burger is positively bursting with flavour!

  • Tofu Minute Steak with Peppercorn Sauce

    This vegetarian take on the French bistro classic minute steak will send your taste buds straight to Paris! We’ve swapped the beef for grilled tofu with a deliciously smoky flavour and paired it with a creamy peppercorn sauce and salted french fries. Bon appétit!

  • Falafel & Lentil Bake

    The Middle East is well known for its delicious cuisine – full of flagrant and delicious spices. This hearty bake combines the rich flavours and textures of a spicy Middle Eastern dish, without the traditional lamb. We’ve switched things up and added falafels to give the recipe a vegetarian twist. Flavoursome, wholesome and filling!

  • Tofu Thai Green Curry

    Out with the chicken, in with the tofu! We’ve revisited the classic Thai Green Curry and given it a delicious vegetarian twist. A mouth-watering, fragrant and creamy dish with tender pieces of tofu and crispy vegetables. You’re definitely going to come back for seconds!

  • Vegetarian Italian Meatballs with Tomato Sauce

    These meat-free meatballs are easy to prepare, easy to cook, and easy to eat! Replacing the traditional minced beef or pork with our delicious vegetarian Lincolnshire Sausages, we’ve blended them with lots of fresh herbs, cheese and breadcrumbs. Covered in a rich tomato sauce, serve over freshed pasts or blached asparagus. Buon appetito!
