What are Fresh Rootz all about?

When it comes to vegetarian street food, Fresh Rootz is one of the best in the UK. Since starting out three years ago, Fresh Rootz has won countless awards for its blend of world foods that it brings to street food markets and festivals across Europe.

We spoke to Martin Phazey from Fresh Rootz to find out what it takes to become one of the ultimate street food vendors!

So where did the idea for Fresh Rootz begin?

From my travels across Europe, Asia and America I aim to replicate the social aspect of cooking and to bring to life the flavours inspired by the different regions I’ve visited. I do what I do, because I love creating new recipes and sharing them with new people. Street Food is all about sharing your eating experience with other people, which is why I enjoy travelling, visiting new street food festivals and new places.

How do you prepare for street food festivals?

We always make sure we choose festivals that are right for us. We broke away from the “regular” street food offering and decided to offer something unique, by only focussing on veggie and vegan food.

We firmly believe British root vegetables are the best you can find anywhere, and we’re inspired by flavours and spices from around the world. The combination of flavours allows us to create wonderfully tasty, contemporary recipes. And that’s not all. We also make delicious hand-made, charcoal-cooked flat breads, zingy salads and homemade sweet treats for afters.

So before heading to a street food festival it’s important to ensure we have all of the vegetables and spices needed for our dishes. We always use fresh, locally sourced ingredients that don’t just offer your five-a-day – we aim for at least seven!

With our dishes, it’s all about a balance of sweet flavours and spices. Typical recipes include; Gambian Style Groundnut Curry, Beetroot & British Root Veg Coconut Curry, Lightly Spiced North African Cous-Cous, Round the World Mezze, Cornish Potato & Roasted Vegetable Soup, Lebanese Spiced Lentil & Cumin Soup.

But our best-seller is definitely the woodland mushroom, roasted pepper and spinach pakora!

Which festivals are you heading to this year?

In April we’ll be visiting Lisbon to take part in the largest street food festival in Europe. This is a two week long festival, where we’ll be showcasing the best that Fresh Rootz has to offer. It’s an honour to have been asked to attend and we’re looking forward to sharing our street food treats with the rest of the world!
