Message from Simon

Hi,

I first became passionate about vegetarian food when I bought my vegetarian restaurant, Greens, in Manchester in 1990.  All I had was a vegetarian cook book and heaps of enthusiasm, but very quickly I began to realise just how much possibility there was in cooking without meat.

 I’ve loved Cauldron products for years and think the Cauldron range is inspiring - so I’m delighted to be able to be bringing my experience and enthusiasm for vegetarian food to their table. 

 

My take on a tasty snack idea comes in the shape of the Pesto and Mozzarella Risotto Bites.  Cauldron have been making delicious falafels for years and when we started experimenting with recipes for new snacks we were particularly taken with Italian flavours.  We took the inspiration from a Sicilian delicacy, arancini, which are small balls of risotto, fried in breadcrumbs.  We thought they would be exciting to introduce for people who already love Cauldron’s falafels, but also people who are completely new to the Cauldron range. You could try them with a salad as a light snack or as an accompaniment to a main course. 

 

The Leek, Cheddar and Rosemary Crisp bakes were also a result of us experimenting with Mediterranean flavour.  The rosemary adds a nice fresh twist to a hearty, ‘comfort food’ style dish.  Once baked, serve up on hot plates with some broad beans and mange tout for a satisfying supper.

 

I’m really excited to be working with Tim and the team at Cauldron and I hope you enjoy our two new products.  We’ve had a great time in the kitchen making them and are confident that we’ve got plenty more delicious recipes to come for later in the year.
