Raspberry & Tofu Brulée
Vegan raspberry & tofu brulée.

Ingredients
- 1 x 250g pack Cauldron Organic Tofu - Plain & Simple
- 200g frozen raspberries
- 2 tbsp golden syrup
- 2 tbsp caster sugar
- Sprig of fresh mint
Method
- Place tofu in food processor and blend to a smooth paste.
- Add frozen raspberries and golden syrup to the tofu and blend until smooth.
- Divide the mixture between 4 ramekin dishes.
- Sprinkle half a tbsp of sugar over each ramekin.
- Preheat a grill on high and place the ramekins underneath for 4-5 minutes until sugar bubbles and caramelises.
- Remove, cool and refrigerate for 1 hour before serving.
